We skipped the usual noche buena fanfare this year. That meant there were no leftovers to contend with the day/s after, which was exhilarating and pathetic at the same time. It was a wonder no one slammed the fridge doors off their hinges after taking one too many peeks in there and finding nothing — we didn’t even have bread.
But there’s all kinds of leftovers, no? Amazing what you can whip up with a single Mandarin chorizo, half a carrot, cabbage, wood-ear mushrooms, and a green bean (as in singular). The beauty of bam-i (and pancit in general) is that it’s an olio of odds and ends to start with, a little bit of everything adds up to a recognizable whole. Imagine what you can do with more.
Not that it lacked anything, really, except maybe more sotanghon (glass or cellophane) noodles than we had in the pantry, but that’s just how it is. No leftovers, right? Mission accomplished.
