Thai cucumber salad presents wonderfully, but I must admit I have never really taken a shine to it. I love cucumber and I love chili. Together, however, I find that the latter dominates. When garnished with peanuts, well, I come close to hating the dish.
Cucumber is delicate in both taste and texture, which is why I always thin the vinegar dressing with water to create a balance, allowing the cuke to get a word in, so to speak. Chili skews the conversation in its favor with its fiery rhetoric, while peanuts add noise and distraction, if not threaten to change the subject altogether. How can the humble cucumber compete? Neither incendiary nor boisterous, it only asks that you give it a chance to be heard. Listen.
