Crispy isaw (chicken intestine)

We were halfway to Ormoc when I felt the hunger pangs coming on, so we decided to stop at the VSU-Baybay market for a quick bite. As we pulled into the gate, a man held out his palm, then pointed to a “No Entry” sign — too late; we had already homed in on a stall at one corner of the lot displaying what looked to be fried isaw.

Make that fantastically battered and fried isaw. The coating was perfectly crispy and lightly flavored (according to the staff, a mixture of flour, Magic Sarap, a bit of curry powder — undetected by me — and plain water), while the chicken intestine itself was properly cleaned and pleasantly chewy. I tried the tempura as well. Bleh. More of that isaw, please. Too bad they did not have pusô (rice in woven coconut leaves) or I would have happily called it lunch. Jenny and I had four sticks each. Our tab? ₱40. You could not have seen happier customers, even after an admonition from campus security.
